Fortunately in Spain, any of its regions, provinces or communities, provides us with great knowledge of how diverse our gastronomic offer is and how it is appreciated throughout the world.

At Paralelo20 we have been kind enough to be invited to visit some of the establishments that make an inland province like Segovia of international value to our culture of good eating and better drinking, of which we are so proud.

So, from the renowned Mesón Cándido, which is not missing from any travel agenda for foreigners, going through the original La Postal Restaurant, a whole experience linked to the train and the admired Antonio Machado, we ended up at El Rancho de la Aldeguela, a charming boutique hotel in the middle of an old shearing farm.

MESON CÁNDIDO, INTERNATIONAL PASSPORT

A visit to one of the most international and emblematic restaurants in Spain. Time seems to stand still for this temple of Segovian gastronomy.

In 1949, a member of the Brotherhood of the Twelve Apostles decided that Cándido was worthy of being the Mayor of Castilla. The Brotherhood was made up of a group of intellectuals and journalists and King Juan Carlos I endorsed this title.

El Mesón de Cándido is a museum with history, recreated in the photographs of Hollywood greats and presided over by a beautiful statue designed by Zuloaga himself -who has his own anecdote-. Apart from all this visual richness, the famous suckling pig with a dish awaits us and then... touch the sky with your hands.

LA POSTAL, A TRAIN TRIP WITH THE LATEST GENERATION CHEF

La Postal restaurant is undoubtedly one of the most magical experiences in the province of Segovia. Gastronomy and culture come together to pay tribute to one of the most representative figures of Spanish literature, Antonio Machado. Added to this is the culinary culture of a chef with cutting-edge, cutting-edge proposals: Jóni Barroso and his team.

The city literally surrenders to the feet of the traveler eager for culinary experiences to offer them the best views of Segovia and a unique experience: being able to have lunch or enjoy dinner in an old carriage from the 50s that becomes a stage gastronomic.

The wagon has a capacity for 54 diners where you can taste from the most avant-garde dishes to the most traditional.

HOTEL EL RANCHO, GASTRONOMY AND CHARM

Located in an old shearing farm, El Rancho de la Aldegüela offers a gastronomic and leisure experience in a unique setting at the foot of the Sierra de Guadarrama, just 10 kilometers from Segovia and La Granja de San Ildefonso , both World Heritage Cities.

The Farm has almost two hectares of surface, houses several establishments, restaurant, hotel, gourmet shop, gift shop and gallery of exhibitions of objects brought by the owner from Africa and Asia.

In the 19th century, the shearing was demolished and the current building was built with the remains of stone and wood.

The farm currently belongs to the Ceballos Giráldez-Escalera family, heirs of Doña Angelina Contreras and Lopez de Ayala, the youngest daughter of the Marquises of Lozoya.

The restaurant is the soul of the experience, to which is added a hotel that has 50 rooms, a piano bar, a leisure and relaxation area with an indoor water area and an outdoor pool. Accompanying its wood-fired oven roasts and the typical beans, which should never be missing, the restaurant at El Rancho de la Aldegüela has a careful wine list, with more than 130 national and international references and a varied offer of spirits and spirits
